The system involves enclosing food in a large steel tube and filling the tube with water then applying intense pressure (up to 87000 psi/ 6000 Bar) which causes sub lethal damage to microorganisms but has minimal effect on the flavour or nutritional attributes of foods and drinks, unlike thermal processes.
